Green Risotto: a perfect recipe to welcome Spring

Spring Green Risotto
Ingredients:
2 cups Saporalia Arborio rice
6 cups chicken or vegetable broth
1 cup dry white wine
1 cup grated Saporalia Parmigiano Reggiano cheese
2 cups chopped asparagus
1 cup frozen peas
2 tablespoons Saporalia butter
1 tablespoon Saporalia Extra-Virgin olive oil
1/4 cup chopped fresh mint leaves
Salt and pepper to taste
Instructions:

In a large saucepan, heat the broth over medium heat. Keep it warm but not boiling.

In a separate pot, heat the olive oil and butter over medium heat. Add the Arborio rice and stir for 1-2 minutes until coated in the oil and butter.

Add the white wine to the pot and stir until it is absorbed by the rice.

Gradually add the warm broth to the pot, one cup at a time, stirring continuously until each cup of broth is absorbed by the rice. This process should take around 20-25 minutes.

When the rice is cooked, add the chopped asparagus and frozen peas to the pot and stir for 2-3 minutes until they are heated through.

Remove the pot from the heat and stir in the grated Parmigiano-Reggiano cheese and chopped mint leaves. Season with salt and pepper to taste.

Serve the risotto hot with additional grated Parmigiano-Reggiano cheese on top.
